Prepare rice according to package directions.
Melt butter in a large skillet set over medium heat. Add walnuts and cook, stirring, until lightly toasted.
Add celery and onion and sauté for 3-4 minutes, until crisp-tender.
Add in rice, raisins, honey, parsley, if using, lemon juice, salt and pepper and stir to thoroughly combine.
Cook for 1-2 minutes, stirring occasionally, until heated through.
