Jeweled Rice is originally a Persian recipe from Iran that transports you to a fragrant experience, further guaranteed with our long-grain variety Success® Basmati Rice. The crown jewel for this recipe is the mixture of ingredients that create a dish unlike any other– carrots, cranberries, pistachios, orange, golden raisins and curry.
Prepare Basmati Rice according to package directions.
Zest orange and reserve. Slice orange into segments, reserve.
In a heavy bottomed sauté pan, combine carrots, cranberries, golden raisins, sugar, curry powder, salt, and pepper with butter and stir over low heat for about 2 minutes.
Add chicken broth and orange zest and turn heat up to high, stirring often until liquid has been absorbed.
Combine cooked rice with spices and dried fruit mixture and stir well to combine. Fold in pistachios and almonds and taste for seasoning, adding additional salt and pepper if desired.
Serve warm, garnished with orange segments.
