  • Prepare rice according to package directions. Zest orange and reserve. Slice orange into segments, reserve.

  • In heavy bottomed sauté pan, combine carrots, cranberries, raisins, sugar, curry powder, salt, and pepper with butter and stir over low heat for about 2 minutes. Add broth and orange zest and turn heat up to high, stirring often until liquid has been absorbed.

  • Combine cooked rice with spice and dried fruit mixture and stir well to combine. Fold in pistachios and almonds and taste for seasoning, adding additional salt and pepper if desired.

  • Serve warm, garnished with orange segments.
