Ingredients

  • 1 bag Success® White Rice
  • 2 medium sweet potatoes, peeled and diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • salt (to taste)
  • pepper (to taste)
  • 3 cups vegetable broth

Instructions

  • Made with our Success® White Rice this chili is the perfect recipe to set aside and forget it in your slow cooker for a hassle-free meal that will satisfy the whole family.

    Step 1

  • In a crockpot, combine the sweet potatoes, kidney beans, onion, garlic, bell pepper, chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Stir well to mix all the ingredients.

    Step 2

  • Pour the vegetable broth into the crockpot, ensuring that the ingredients are fully submerged.

    Step 3

  • Cover the crockpot with a lid and cook on high heat for 4 hours, or until the sweet potatoes are tender. Stir the chili occasionally during cooking to prevent sticking.

  • Prepare rice according to package directions.

  • Once finished, serve chili in a bowl over the rice.
