This Green Chicken Rice Chili is a comforting complete meal that’s ready in minutes. Surprise the family with this unique dish for Mexican night!
Prepare rice according to package directions.
Meanwhile, heat oil in a large saucepan set over medium heat. Add onion and poblano pepper and sauté for 3 to 5 minutes, or until slightly softened.
Stir in chicken broth, salsa and beans and bring to a boil. Reduce heat to medium-low. Cover and cook for 8 to 10 minutes, or until flavors are blended. Add rice and chicken and cook for 2 to 3 minutes, or until heated through.
Serve chili garnished with Monterey Jack cheese, green onions and radishes.
To make this dish more kid-friendly, make sure you use a mild salsa.
Any leftover chili can be used as a filling for burritos for lunches the next day.
