Ingredients

  • 2 bags Success® Basmati Rice
  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 poblano pepper, seeded and diced
  • 3 cups low-sodium chicken broth
  • 1 jar (16 oz) tomatillo salsa
  • 1 can (15.5 oz) white beans, drained and rinsed
  • 2 cups shredded, cooked chicken
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup green onions, thinly sliced diagonally
  • 2 radishes, thinly sliced into matchsticks

Instructions

  • This Green Chicken Rice Chili is a comforting complete meal that’s ready in minutes. Surprise the family with this unique dish for Mexican night!

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Meanwhile, heat oil in a large saucepan set over medium heat. Add onion and poblano pepper and sauté for 3 to 5 minutes, or until slightly softened.

    Step 3

  • Stir in chicken broth, salsa and beans and bring to a boil. Reduce heat to medium-low. Cover and cook for 8 to 10 minutes, or until flavors are blended. Add rice and chicken and cook for 2 to 3 minutes, or until heated through.

    Step 4

  • Serve chili garnished with Monterey Jack cheese, green onions and radishes.

    To make this dish more kid-friendly, make sure you use a mild salsa.

The Right Spice
