Step 1
Rinse rice bag under cold water to remove the starch. Prepare rice according to package directions.
Step 2
Prepare vinegar mixture, while rice is cooking. In a small saucepan, combine rice vinegar, sugar, and salt. Heat over medium-low heat until sugar and salt have dissolved, about 1 minute. Set aside.
Step 3
In a small bowl, mix mayonnaise, sriracha sauce and sesame oil together. Set aside.
Step 4
Transfer cooked rice onto a large baking sheet. Drizzle ½ of the mixture over the rice, turning until all rice is fully coated. Taste and add more vinegar if desired. Spread rice into a thin layer and allow to cool to room temperature. Sprinkle sesame seeds on top.
Step 5
Lay down a sushi nori sheet. Spread a layer of rice on one sheet. Place half of the carrots and cucumbers on the rice. Place crab and shrimp on top last.
Step 6
Use another sushi nori sheet to finish the roll. Place the sheet just under the first one and begin to roll. Repeat with remaining ingredients. Wrap both burritos in plastic wrap. Allow to set for 10 minutes.
Step 7
Slice the burritos in half and serve with spicy mayo.
Shrimp can be substituted tuna or salmon.
Spicy mayo can be replaced with ponzu or sweet chili sauce or a combination of each.
