Prepare quinoa according to package directions, adding bouillon cubes to water.
In a medium saucepan heat butter and oil over medium heat.
Add shallot and garlic and sauté 1 minute.
Add quinoa and sauté until all grains are well coated.
Stir in wine and continue to cook and stir until wine is absorbed.
Add cream and continue to cook for 1 more minute.
Remove from heat and stir in cheese. Serve immediately.
To make this recipe completely vegetarian, sub in vegetable bouillon cubes for chicken.
