Quinoa Risotto

This light version of a classic Italian Risotto using Tri-Color Quinoa takes less time to cook, is full of flavor and just as creamy!

Ingredients

  • 1 bag Success® Quinoa
  • 2 chicken bouillon cubes
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 large shallot, chopped
  • ¼ cup dry white wine
  • ¼ cup heavy cream
  • ¼ cup Parmesan cheese

Instructions

  • This Italian comfort food classic is made with Success® Quinoa, so it’s lighter, full of flavor and as creamy as ever!

    Step 1

  • Prepare quinoa according to package directions, adding bouillon cubes to water.

    Step 2

  • In a medium saucepan heat butter and oil over medium heat.

    Step 3

  • Add shallot and garlic and sauté 1 minute.

    Step 4

  • Add quinoa and sauté until all grains are well coated.

    Step 5

  • Stir in wine and continue to cook and stir until wine is absorbed.

    Step 6

  • Add cream and continue to cook for 1 more minute.

    Step 7

  • Remove from heat and stir in cheese. Serve immediately.

    Recipe Tips

  • To make this recipe completely vegetarian, sub in vegetable bouillon cubes for chicken.
