Quinoa Risotto

This light version of classic, comforting Italian risotto takes less time to cook thanks to Tri-Color Quinoa but is full of flavor and as creamy as ever!

Ingredients

  • 1 bag Success® Tri-Color Quinoa
  • 2 chicken bouillon cubes
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 large shallot, chopped
  • 1 clove garlic, minced
  • 1/4 cup dry white wine
  • 1/4 cup heavy cream
  • 1/4 cup Parmesan cheese

Instructions

  • We’ve made an Italian comfort food classic with Success® Tri-Color Quinoa, so it’s quicker and lighter but still full of flavor and as creamy as ever!

    Step 1

  • Prepare quinoa according to package directions, adding bouillon cubes to water.

    Step 2

  • Heat butter and olive oil in a medium saucepan over medium heat.

    Step 3

  • Add shallot and garlic and sauté for 1 minute.

    Step 4

  • Add quinoa and sauté until all grains are well coated.

    Step 5

  • Stir in wine and continue to cook and stir until wine is absorbed.

    Step 6

  • Add cream and continue to cook for 1 more minute.

    Step 7

  • Remove from heat and stir in cheese. Serve immediately.

    Recipe Tip

  • To make this recipe completely vegetarian, sub in vegetable bouillon cubes for chicken.
