Bistro Herbed Chicken and Rice

  • 2 bags Success® White Rice or Success® Brown Rice
  • 4 seasoned boneless skinless chicken breasts
  • 2 tsp garlic, minced
  • 2 tbsp olive oil
  • 1 can (14 1/2 oz.) Italian-style diced tomatoes, drained
  • 3/4 cup Parmesan cheese, grated (optional)
  • basil, chopped (optional)


  • Bring the flavors of Italy to your table in under 30 minutes with this garlic herbed chicken and rice dish with juicy Italian-style diced tomatoes all served over a fluffy bed of white rice topped with shaved Parmesan cheese and basil.

    Step 1

  • Prepare rice according to package directions and set aside.

    Step 2

  • Pound each chicken breast to ½-inch thickness and rub with garlic.

    Step 3

  • Heat oil in a large skillet over medium heat.

    Step 4

  • Brown chicken for 2 minutes on each side.

    Step 5

  • Add tomatoes, cover and simmer for 5 minutes, or until chicken is cooked.

    Step 6

  • Serve over bed of hot rice.

    Step 7

  • Garnish with Parmesan cheese and basil, if desired.
