Bring the flavors of Europe to your table in under 30 minutes with this garlic and herb-infused chicken and rice dish. Made with juicy Italian-style diced tomatoes and served over a fluffy bed of white rice topped with Parmesan cheese and basil, it’s an elegant and satisfying dish you’re sure to love.
Prepare rice according to package directions and set aside.
Meanwhile, pound each chicken breast to 1/2-inch thickness and rub with garlic.
Heat oil in a large skillet over medium heat. Add chicken and brown for 2 minutes on each side.
Add tomatoes, cover and simmer for 5 minutes, or until chicken is cooked through.
Serve chicken and tomatoes over rice. Garnish with Parmesan cheese and basil, if using.
To add more flavor to this, or any, dish, cook the rice in chicken, beef or vegetable broth instead of water. Add some herbs, such as oregano, basil or thyme, to the cooking liquid for even more flavor.
If you don’t have any Parmesan on hand, try topping this dish with a different type of cheese. Try goat cheese or blue cheese for a completely different taste.
