Ingredients

  • 2 bags Success® White Rice
  • nonstick cooking spray
  • 1 cup chopped celery
  • 1 cup chopped green bell pepper
  • 1 cup thinly sliced onion
  • 3 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1/2 cup dry white wine
  • 1/4 tsp red pepper flakes
  • 1 bay leaf
  • 1/4 cup thinly sliced green onion

Instructions

  • Our Chicken Creole is a delicious dinner option any night of the week. A complete meal that comes together in one pan, it works as well on busy nights, as it does for company.

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Spray a large, nonstick skillet with cooking spray. Heat over medium-high. Add celery, green pepper, onion and garlic. Sauté until crisp-tender, about 3 minutes. Add mushrooms, and continue cooking for an additional 3 minutes.

    Step 3

  • Add chicken, tomatoes, wine, red pepper flakes, and bay leaf to skillet, and reduce heat to low. Simmer, stirring occasionally, until chicken is cooked through, about 15 minutes.

    Step 4

  • Remove bay leaf. Serve over rice, sprinkled with green onions.

    Recipe Tip

    Feel free to replace the dry white wine called for in the recipe with chicken or vegetable stock.

Often associated with the cuisine of New Orleans, Louisiana, Chicken Creole is a popular dish typically served at special occasions and events, such as Mardi Gras. Full of spices, herbs and veggies, this stew is typically served over rice, making it a hearty and flavorful dish.

Customize It

Tired of chicken? This meal is also delicious with spicy sausage or seafood. Add all of your favorite herbs, such as rosemary and thyme to up the aromatics and have the whole house smelling delicious! Traditionally this dish has more of a stew-like consistency, so don’t be afraid to add more liquid with a few cans of diced tomatoes. After all, the Success® White Rice will soak up all of the delicious flavors!

Heat it Up

If red pepper flakes isn’t spicy enough for you, try adding different chilis to your Creole. For quick spice, use cayenne powder and some paprika. For a smoky heat that will compliment the herbs in the dish, grill some jalapenos until they are soft and charred, adding another dimension to your dish! 

Chicken Tips 

When buying any meat, it is very important to make sure it is good quality. Look for chicken breasts that are firm, plump and have a consistent shape. Avoid chicken breasts that are slimy, have an unpleasant and strong odor, or have discoloration or bruising. Once cooked, slice into the breasts to check for any remaining pink color to avoid eating raw meat.
