If you’re trying to incorporate more vegetables into your life you might need some inspiration. Instead of relying on typical lettuce salads, keep things interesting by using a variety of ingredients. When you’re drawing up your weekly meal plans, don’t forget to include rice salads! They’re a great way to add a variety of chopped vegetables to your diet, along with hearty rice to keep you full for longer.

Since variety is the spice of life, make this rice salad your own by experimenting with mix-ins. Try adding shredded chicken, hard-boiled eggs, fresh mango, ground cumin, fresh grated ginger, grilled corn off the cob, etc. The possibilities are almost endless! If you’re not a fan of raw onion, simply sauté it first or leave it out. You could also try adding chopped almonds and raisins to this salad for a sweet and crunchy finish.

Tips for Success(ful) Rice Salads

Cooking Success® Boil-In-Bag Rice is so fast and easy we recommend that you cook up a few bags of rice at once and let them cool to have on hand for salads throughout the week. Simply make sure that your rice is fully cooled before mixing it with vegetables or you might end up with a watery, warm salad.

The recipe calls for long-grain basmati rice but if you’re looking for more whole grains, feel free to use Success® Brown Rice.

Make your own simple vinaigrette with balsamic vinegar, olive oil, salt and pepper. Toss a big batch together and just use as much as you need. Save the rest for another tasty meal, like our Tuna and Jasmine Rice Salad.
