Summer Corn and Rice Salad

This summer rice salad is made with a combination of fresh herbs, tomatoes, corn and Basmati Rice topped in a vinaigrette and ready in less than 15 minutes.

  • 1 bag Success® Basmati Rice
  • ½ cup vinaigrette dressing
  • ½ cup minced fresh basil
  • 1 cup frozen corn, thawed
  • 2 Roma tomatoes, seeded and diced
  • ½ cup red onion, diced
  • 2 green onions, chopped
  • salt and ground black pepper, to taste

  • Prepare rice according to package directions. Cool.

  • In a medium bowl, combine dressing, basil, corn, tomatoes, and red and green onions. Fold in rice. Serve room temperature or chilled.
