Prepare rice according to package directions. Drain and remove from bag. Set aside.
Meanwhile, heat oil in a large, nonstick skillet over high heat. Add turkey and cook, breaking apart with a spoon, for 5 minutes, or until lightly browned.
Add onions, garlic, chili powder, salt and pepper. Cook for 5 minutes, or until onion is softened. Pour in salsa and bring to a simmer. Stir in beans and prepared rice. Simmer for 10 minutes, or until slightly reduced.
Spoon turkey mixture into lettuce cups. Sprinkle with cheese and dollop with sour cream. Garnish with avocado, if using, cilantro and green onion. Serve immediately.
Pack the lettuce leaves, rice mixture and garnishes in separate containers for a great lunch to take to work or school.
