  • 1 bag Success® Brown Rice
  • 1 tbsp vegetable oil
  • 1 lb ground turkey
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tbsp chili powder
  • ½ tsp salt and freshly ground black pepper
  • 2 cups salsa
  • 1 can (15 oz.) white kidney beans, drained
  • 16 Boston lettuce leaves
  • 1 cup shredded Cheddar cheese
  • ½ cup sour cream
  • 1 ripe avocado, peeled, pitted and diced, if desired
  • ½ cup fresh cilantro leaves
  • 2 green onions, thinly sliced


  • Ditch the silverware and have some mealtime fun with these delectable, Asian-inspired chili rice lettuce cups.

  • Step 1

  • Prepare rice according to package directions. Drain and remove from bag. Set aside.

    Step 2

  • Meanwhile, heat oil in large nonstick skillet over medium-high heat. Crumble in turkey; cook, breaking into pieces, for 5 minutes or until lightly browned.

    Step 3

  • Add onion, garlic, chili powder, salt and pepper. Cook for 5 minutes or until onion is softened. Pour in salsa; bring to a simmer. Stir in beans and prepared rice. Simmer for 10 minutes or until slightly reduced.

    Step 4

  • Spoon turkey mixture into lettuce cups. Sprinkle with cheese and dollop with sour cream. Garnish with avocado, cilantro and green onion. Serve immediately.
