Ingredients

  • 1 bag Success® White Rice
  • 1 tbsp canola oil
  • 1 lb ground chicken
  • 2 cups shredded vegetable slaw
  • 1/2 cup prepared pad Thai sauce
  • 1 cup bean sprouts (optional)
  • 2 green onions, thinly sliced
  • 8 lettuce leaves (butter, romaine or any sturdy large leaf lettuce variety)
  • 1/4 cup chopped fresh cilantro leaves
  • 1/4 cup crushed peanuts
  • 4 lime wedges

Instructions

  • Effortless and tasty, these Thai Chicken and Rice Lettuce Wraps will take your taste buds on a Thai-flavored adventure, tonight!

  • Step 1

  • Prepare rice according to package directions.

    Step 2

  • Heat oil in a medium wok or skillet over medium-high heat. Stir-fry chicken for 5-7 minutes, until cooked through.

    Step 3

  • Add vegetable slaw and sauce and continue to stir-fry for 2 additional minutes. Fold in rice, bean sprouts, if using, and green onions.

    Step 4

  • Portion rice mixture into lettuce leaves. Top with cilantro and peanuts. Serve wraps with lime wedges.

    Recipe Tip:

    To make this dish vegetarian, simply omit the chicken and substitute it with your favorite seasoned, firm tofu. Alternatively, you can increase the amount of vegetable slaw to 4 cups.
