Ingredients

  • 2 bags Success® White Rice
  • 1 lb red grapes
  • 3 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups arugula
  • 3/4 cup crumbled feta cheese
  • 1/4 cup sliced almonds, toasted
  • 1/4 cup balsamic vinaigrette

Instructions

    Step 1

  • Prepare rice according to package directions. Allow to cool. Preheat oven to 425°F.

    Step 2

  • Meanwhile, on a large baking sheet, toss together grapes, balsamic vinegar, olive oil, salt and pepper. Bake, shaking baking sheet every 5-10 minutes, for 18-20 minutes, or until grapes are blistered.

    Step 3

  • Combine rice, roasted grapes, arugula, feta cheese, toasted almonds and balsamic vinaigrette in a large bowl.
