Rice Primavera

This Vegetarian Rice Primavera is made with Success® Brown Rice, fresh veggies, Italian seasonings, heavy cream and stewed tomatoes.

  • 2 bags Success® Brown Rice
  • ¼ cup olive oil
  • 1 onion, finely chopped
  • 2 carrots, thinly sliced
  • 1 red pepper, chopped
  • 1 zucchini, trimmed, halved lengthwise and thinly sliced
  • 4 garlic cloves, minced
  • 1 Tbsp Italian seasoning
  • 1 tsp salt and freshly ground black pepper
  • ⅓ cup white wine
  • 1 can (14 ½ oz.) diced tomatoes
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • ½ cup heavy whipping cream
  • ½ cup frozen baby peas, thawed
  • ¼ cup grated Parmesan cheese
  • ½ cup fresh basil leaves


  • Make this Brown Rice Primavera with a medley of veggies including broccoli, cauliflower, green peas, and zucchini. Added to the mix, stewed tomatoes, heavy cream, and savory spices, then topped with fresh basil. It’s the rice of a veggie-lovers’ dreams.

    Step 1

  • Prepare rice according to package directions. Drain and transfer the rice to the bowl. Set aside.

    Step 2

  • Meanwhile, heat oil in a large nonstick skillet set over medium heat. Cook onion and carrot for 5 minutes or until softened. Add red pepper, zucchini, garlic, Italian seasoning, salt, and pepper. Cook for 5 minutes or until vegetables are tender-crisp.

    Step 3

  • Increase heat to medium-high. Add wine; simmer for 2 to 3 minutes or until slightly reduced.

    Step 4

  • Add tomatoes, broccoli, cauliflower, and cream; simmer for 5 minutes or until tender. Stir in peas and Parmesan. Pour over rice and stir. Transfer to a serving platter and sprinkle with basil. Serve immediately.

Veggie Brown Rice

Yes, this rice primavera is made with loads of veggies, but that’s not all it has to offer. This recipe is also chock-full of whole grains and spices, making it just as mouth-watering–not to mention filling–like your favorite risotto recipe.

With Italian seasoning and finely chopped garlic, it’s a dish with all the tastes of Italy. Aside from the veggies, including broccoli, cauliflower, green peas, and zucchini, it’s also made with a sofrito-like base of carrots, onions, and red pepper.

This mixture gets cooked down with white wine, for an added dose of sweetness and acidity, as well as diced tomatoes, broccoli, and, cauliflower. After it’s sautéed for a few minutes, this tasty mixture gets an added dose of creaminess.

With a good amount of heavy whipping cream and parmesan cheese, this veggie medley turns into the perfect rice coating. Add in the peas, top it over the precooked 10-minute Success® Brown Rice, stir it up, and enjoy!
