Ingredients

  • 2 bags Success® Brown Rice
  • 1/4 cup olive oil
  • 2 carrots, thinly sliced
  • 1 onion, finely chopped
  • 1 red pepper, chopped
  • 1 zucchini, trimmed, halved lengthwise and thinly sliced
  • 4 cloves garlic, minced
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup dry white wine
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1/2 cup heavy cream
  • 1/2 cup frozen baby peas, thawed
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup chopped fresh basil leaves

Instructions

  • With broccoli, cauliflower, green peas, zucchini and more, this Rice Primavera is a delicious way to add to your daily veggie intake! Blended with stewed tomatoes, heavy cream and savory spices, this dish is any veggie-lover’s dream.

    Step 1

  • Prepare rice according to package directions. Set aside.

    Step 2

  • Meanwhile, heat oil in a large, nonstick skillet set over medium heat. Cook carrots and onions for 5 minutes, or until softened. Add red pepper, zucchini, garlic, Italian seasoning, salt and pepper. Cook for 5 minutes, or until vegetables are tender-crisp.

    Step 3

  • Increase heat to medium-high. Add wine and cook, stirring, for 2 to 3 minutes, or until wine has evaporated.

    Step 4

  • Add tomatoes, broccoli, cauliflower and cream. Simmer for 5 minutes, or until vegetables are tender. Stir in peas and Parmesan. Add rice and stir. Transfer to a serving platter and sprinkle with basil.

  • For added flavor and an elegant presentation, garnish this dish with toasted pine nuts and additional freshly-grated Parmesan cheese.

     

Veggie Brown Rice

This Rice Primavera is made with loads of veggies, but that’s not all it has to offer. This recipe is also chock-full of whole grains and spices, making it just as mouth-watering — not to mention filling — as your favorite risotto recipe.

With Italian seasoning and finely chopped garlic, this dish has tons of Italian flavor. Aside from the veggies, including broccoli, cauliflower, green peas and zucchini, this dish is also made with a sofrito-like base of carrots, onions and red pepper.

This mixture gets cooked down with white wine, for an added dose of sweetness and acidity, as well as diced tomatoes, broccoli and cauliflower. After it’s sautéed for a few minutes, this tasty mixture gets an added dose of creaminess from heavy cream and Parmesan cheese.
