  • Prepare rice according to package directions. Drain and transfer rice to bowl. Set aside.

  • Meanwhile, heat oil in a large nonstick skillet set over medium heat. Cook onion and carrot for 5 minutes or until softened. Add red pepper, zucchini, garlic, Italian seasoning, salt, and pepper. Cook for 5 minutes or until vegetables are tender-crisp.

  • Increase heat to medium-high. Add wine; simmer for 2 to 3 minutes or until slightly reduced.

  • Add tomatoes, broccoli, cauliflower, and cream; simmer for 5 minutes or until tender. Stir in peas and Parmesan. Pour over rice and stir. Transfer to serving platter and sprinkle with basil. Serve immediately.


Recipe Tips

Garnish with toasted pine nuts and freshly grated Parmesan cheese for a gourmet finish.
