Ingredients

  • 2 bags Success® Brown Rice
  • 1 lb medium shrimp, peeled and deveined
  • 1/2 cup Hawaiian marinade, divided
  • 2 tbsp canola oil
  • 1 pkg (16 oz) frozen stir-fry vegetables
  • 1 can (8 oz) pineapple chunks, drained (reserving 2 tbsp juice)
  • 1 tsp soy sauce

Instructions

  • Bring the tropical flavors of Hawaii to your kitchen by adding pineapple chunks and Hawaiian marinade to a delicious shrimp stir-fry. This recipe is a tasty dinner solution that’s ready in minutes!

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Meanwhile, combine shrimp and 1/4 cup marinade in a medium bowl. Stir to coat thoroughly.

    Step 3

  • Heat oil in a large skillet over medium heat. Add vegetables and stir-fry for 1 minute. Cover and cook for 4 additional minutes.

    Step 4

  • Drain shrimp and add to skillet. Add pineapple, 2 tablespoons of reserved pineapple juice, remaining marinade and soy sauce to skillet.

    Step 5

  • Stir-fry until all ingredients are well coated and shrimp is cooked through, about 5 minutes. Serve stir-fry over rice.

    Recipe Tip

    If you have fresh veggies on hand, use them instead of frozen. Simply cut them into matchsticks or  a small dice and increase the stir-fry time to 8-10 minutes, until the vegetables are crisp yet tender.
