Strawberry Shortcake Rice Pudding Parfaits

This strawberry shortcake parfait combines creamy basmati rice pudding and fresh and fruity strawberries for a comforting dessert that everyone will love.

  • 2 bags Success® Basmati Rice
  • 1 cup heavy cream
  • 1 cup 2% milk
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 cups strawberries, thinly sliced
  • 1/4 cup strawberry jam
  • 4 tsp lemon juice
  • 4 strawberries, sliced


  • Layered to delicious perfection, serve this chilled dessert for a weeknight treat, snack or for your next barbecue grill out. Try with Success® Basmati Rice for that signature rice pudding texture.

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • In a saucepan set over medium-high heat, stir together rice, cream, milk, sugar and vanilla; bring to boil. Reduce heat to low; cook, stirring often, for 10 to 15 minutes or until rice is very tender and mixture is slightly thickened. Let cool completely; refrigerate for 15 minutes.

    Step 3

  • Meanwhile, toss together sliced strawberries, jam and lemon juice. Let stand for 5 minutes.

    Step 4

  • Spoon 1/3 cup rice pudding into bottom of each of 4 serving glasses. Top with 1/3 cup strawberry mixture. Repeat layers twice. Garnish each serving with sliced strawberry.

    Recipe Tip

    Depending on the season, substitute cherries, peaches, or blueberries for strawberries.

    Use mint leaves as a garnish for a pop of color.

    As the recipe calls for cooked rice, use up day-old leftover plain rice!

Layered Parfait

While most everyone can enjoy the simplicity of a Classic Rice Pudding with rich and creamy rice, there is something additionally special about layering it with fresh fruit for a tasty parfait!

We’ve used delicious Summer strawberries for the recipe, however, you can swap in another fruit that is in season or use frozen fruit! Use your choice of complementary jam to blend together.

Layer your rice pudding to perfection with a blend of fresh fruit, jam and citrusy lemon to really bring out the fruity flavors. Make sure to let that blend sit for at least 5 minutes! The resting time helps the flavors to settle and deepen for an incredibly delicious bite, every time.
