Serve this deliciously layered, chilled dessert for a weeknight treat, snack or at your next barbecue. Try it with Success® Basmati Rice for that signature rice pudding texture.
Prepare rice according to package directions.
In a saucepan set over medium-high heat, stir together rice, cream, milk, sugar and vanilla; bring to a boil. Reduce heat to low; cook, stirring often, for 10 to 15 minutes or until rice is very tender and mixture is slightly thickened. Let cool completely; refrigerate for 15 minutes.
Meanwhile, toss together 2 cups of sliced strawberries, jam and lemon juice in a small bowl. Let stand for 5 minutes.
Spoon 1/3 cup rice pudding into bottom of each of 4 serving glasses. Top with 1/3 cup strawberry mixture. Repeat layers twice. Garnish each serving with remaining sliced strawberries.
Depending on the season, substitute cherries, peaches, or blueberries for the strawberries called for in the recipe.
Use mint leaves as a garnish for a pop of color.
