Never eat a boring salad again with this refreshing, energizing and flavor-packed quinoa salad. Perfectly paired with creamy green goddess dressing, it’s sure to be a family favorite.
Step 1
Prepare quinoa according to package directions. Allow to cool completely.
Step 2
In a blender, purée avocado, pesto, yogurt, lime juice, salt and pepper until smooth.
Step 3
Toss together quinoa, spinach, cucumbers, grape tomatoes, red onion and avocado dressing in a large bowl. Mix together until well coated. Top with toasted pecans.
Substitute arugula or kale for spinach.
