Ingredients

  • 1 bag Success® Tri-Color Quinoa
  • 1 ripe avocado, halved, pitted and peeled
  • 1/4 cup prepared basil pesto
  • 1/4 cup plain Greek yogurt
  • 2 tbsp lime juice
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 cups baby spinach
  • 2 cups diced cucumber
  • 2 cups halved grape tomatoes
  • 1/2 small red onion, thinly sliced
  • 1/2 cup pecan halves, toasted

Instructions

  • Prepare quinoa according to package directions. Allow to cool completely.

  • In a blender, purée avocado, pesto, yogurt, lime juice, salt and pepper until smooth.

  • Toss together quinoa, spinach, cucumbers, grape tomatoes, red onion and avocado dressing in a large bowl. Mix together until well coated. Top with toasted pecans.
