Easy Green Goddess Summer Quinoa

  • 1 bag Success® Tri-Color Quinoa
  • 1 ripe avocado, halved, pitted and peeled
  • ¼ cup plain Greek yogurt
  • ¼ cup prepared basil pesto
  • 2 tbsp lime juice
  • ½ tsp each salt and pepper
  • 4 cups baby spinach
  • 2 cups diced cucumber
  • 2 cups halved grape tomatoes
  • ½ small red onion, thinly sliced
  • ½ cup pecan halves, toasted

  • Step 1

  • Prepare quinoa according to package directions. Let cool completely.

    Step 2

  • In blender, purée avocado, yogurt, pesto, lime juice, salt, and pepper until smooth.

  • In large bowl, toss together quinoa, spinach, cucumber, grape tomatoes, red onion, and avocado dressing until well coated. Top with toasted pecans.
