  • 1 can (12 oz) evaporated milk, divided
  • 1/3 cup sugar
  • 1/4 tsp salt
  • 1 egg
  • 1 tsp vanilla extract
  • ground cinnamon (optional)
  • fresh fruit (optional)
  • fresh mint leaves (optional)

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Meanwhile, heat 1 cup of evaporated milk, sugar and salt in a medium saucepan over medium heat.

    Step 3

  • Add cooked rice to heated milk mixture and continue to cook over medium heat for 10 minutes, stirring constantly.

    Step 4

  • Beat egg with remaining milk in a small bowl. Gradually pour into hot rice mixture, stirring constantly. Continue to cook for 5 minutes.

  • Add vanilla and stir to combine.
