Prepare rice according to package directions.
In a medium saucepan, heat 1 cup of milk (6 oz), sugar and salt. Add cooked rice to milk mixture and continue to cook over medium heat for 10 minutes, stirring constantly.
Step 3–In a small bowl, beat egg with remaining milk. Gradually pour into hot rice mixture, stirring constantly. Continue to cook for 5 minutes.
Serve warm or cold. Add vanilla or ground cinnamon, if desired. Top with fresh fruit and mint, if desired.
