  • 1 can (12 oz) evaporated milk, divided
  • 1/3 cup sugar
  • 1/4 tsp salt
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon (optional)
  • fresh fruit (optional)
  • fresh mint leaves (optional)

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • In a medium saucepan, heat 1 cup of milk (6 oz), sugar and salt. Add cooked rice to milk mixture and continue to cook over medium heat for 10 minutes, stirring constantly.  

     Step 3In a small bowl, beat egg with remaining milk. Gradually pour into hot rice mixture, stirring constantly. Continue to cook for 5 minutes. 

    Step 4

  • Serve warm or cold. Add vanilla or ground cinnamon, if desired. Top with fresh fruit and mint, if desired.
