Prepare rice according to package directions.
Meanwhile, preheat oven to 375°F. Coat a baking sheet with nonstick cooking spray and set aside.
Unroll dough and make 2 large squares from each can, pressing seams to seal.
Combine rice, Cheddar, chicken, cream cheese, green onions, salt and pepper in a medium bowl. Evenly divide mixture between dough squares. Pull up each corner of the dough towards the center, pressing to seal. Place on baking sheet.
Bake for 15 minutes, or until golden brown.
