As the name implies, this Confetti Beans and Rice Salad with Chicken is a colorful dish, made with a trifecta of tasty veggies including black beans, green onions, corn, and peppers.

Additionally, this flavorful combination gets an extra boost of depth with the help of our Success® Brown Rice, which is 100% whole grain and perfect for those looking to get their complex carbs in.

All dressed in a bit of light Caesar salad dressing and dijon mustard, this chicken and rice salad is perfect for those who love crunchy vegetables mixed with a zesty, creamy dressing.

Best of all, it’s got all the main food groups – sturdy whole grains, tons of protein, and all the veggies. Plus, fruit! That is if you decide to add some sliced tomatoes to the mix – your salad, your rules.

A Great Side Dish

This rice and bean chicken salad is great for large gatherings like family summer barbecues or as a contribution to your next potluck dinner with friends.

Going meat-free? It can be made 100% vegetarian by skipping out on the chicken, making it a fantastic Meatless Monday option. Plus, with the same ingredients, it will still offer up tons of plant-based protein.
