Step 1
Preheat oven to 375°F. Stir rice, vegetables, soup, water and onion powder together in a 2-quart, 12 x 8-inch casserole dish.
Step 2
Top with chicken. Season chicken with salt and pepper. Cover.
Step 3
Bake for 45 minutes, or until rice is tender and chicken is cooked through. Top with cheese. Return to oven, uncovered, and allow cheese to melt.
