Prepare rice according to package directions. Allow to cool.
Dissolve coffee granules in boiling water and set aside.
Combine milk, pudding mix and cinnamon in a medium mixing bowl. Using the paddle attachment, beat on low speed for 2 minutes. Fold in coffee, cooled rice and whipped topping. Spoon into serving dishes. Garnish with additional whipped topping and wafer crumbs.
