Take a break from your hectic day with this simple, sweet and creamy Speedy Rice Pudding topped with cinnamon. Perfect as is, you can also get creative and enjoy it with your favorite mix-ins.
Prepare rice according to package directions. Allow to cool.
Meanwhile, combine sugar and cornstarch in a medium saucepan. Add milk and eggs and mix well. Stir in rice. Bring mixture to a boil, stirring constantly. Reduce heat to medium and cook for 20 minutes, stirring frequently.
Remove pudding from heat. Add in butter and vanilla and stir until butter has melted and is fully incorporated. Pour pudding into serving bowls. Sprinkle with cinnamon.
