Ham and Brussel Sprouts with White Rice Gratin

Ingredients

  • 1 bag Success® White Rice
  • 1/2 lb Brussels sprouts, trimmed and halved
  • 1/3 cup diced ham
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 3/4 tsp salt, divided
  • 3/4 tsp black pepper, divided
  • 3/4 cup heavy cream
  • 1/4 cup chicken broth
  • 2 tbsp fresh chives, finely chopped
  • 1/2 tsp dried thyme
  • 1 cup shredded Swiss cheese
  • 1/2 cup Parmesan cheese, grated and divided
  • 1/3 cup breadcrumbs
  • 2 tbsp butter, melted

Instructions

  • Skip the hassle but not the flavor with this delicious rice, ham and veggie casserole baked to perfection with cheddar and Parmesan cheese.

    Step 1

  • Prepare rice according to package directions. Meanwhile, preheat oven to 450°F. 

    Step 2

  • Toss together Brussels sprouts, ham, olive oil, garlic, 1/4 teaspoon salt and 1/4 teaspoon pepper in a large bowl. Place on a parchment paper-lined baking tray and roast for 15 minutes, or until caramelized. Decrease oven temperature to 425°F. 

    Step 3

  • Toss together rice, Brussels sprouts mixture, cream, chives, thyme, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a large bowl. Stir in Swiss cheese and 1/3 cup Parmesan cheese. Transfer mixture to a greased, 2-quart baking dish. 

     Step 4

  • Stir together breadcrumbs, remaining Parmesan and melted butter in a small bowl. Sprinkle over rice mixture. 

     Step 5

  • Bake for 15 minutes, or until golden brown and bubbling. 

     Recipe Tip

     For a milder flavor, substitute with Cheddar cheese.
