Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1 lb lean ground beef
  • 2 garlic cloves, minced
  • 2 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 cups fresh baby spinach leaves, chopped
  • 1 can (15 oz) tomato sauce
  • 1 cup shredded mozzarella cheese
  • 2 tbsp finely chopped parsley

Instructions

    Step 1

  • Preheat oven to 400°F. Prepare quinoa and rice together according to package directions.

    Step 2

  • Meanwhile, heat oil in a large skillet over medium heat. Sauté onion for about 3 minutes, or until starting to soften. Add beef, garlic, chili powder, salt and pepper to skillet. Sauté for 5 to 8 minutes, or until beef starts to brown.

    Step 3

  • Stir in spinach and tomato sauce; bring to a boil. Reduce heat to medium-low and simmer for 5 to 10 minutes, or until sauce is slightly thickened. Stir in quinoa and rice.

    Step 4

  • Spoon mixture into a 9-inch square casserole dish. Sprinkle with cheese. Bake for 10 to 15 minutes, or until cheese is golden and bubbly. Sprinkle with parsley before serving.

    Recipe Tips

    Substitute Cheddar or Swiss cheese for mozzarella cheese, if desired.

    If you prefer, use ground turkey, pork or chicken in place of the ground beef. For a vegetarian option, use a medley of canned beans or your favorite plant-based ground meat.
