  • Preheat oven to 400°F. Prepare quinoa and rice together according to package directions.

  • Meanwhile, heat oil in large skillet set over medium heat; cook onion for about 3 minutes or until golden. Stir in beef, garlic, chili powder, salt, and pepper; cook for 5 to 8 minutes or until beef starts to brown.

  • Stir in spinach and tomato sauce; bring to boil. Reduce heat to medium-low; simmer for 5 to 10 minutes or until sauce is slightly thickened. Stir in quinoa and rice.

  • Spoon into 9-inch square casserole dish; sprinkle with cheese. Bake for 10 to 15 minutes or until cheese is golden and bubbly. Sprinkle with parsley.


Recipe Tips

• Substitute Cheddar or Swiss for mozzarella cheese if desired. • Substitute turkey, pork or chicken for ground beef if desired. For a vegetarian option, use a medley of canned beans.
