Ingredients

  • 1 bag Success® Brown Rice
  • 2 medium Golden Delicious or Cortland apples
  • 1 tbsp lemon juice
  • 1/2 cup chopped celery
  • 1/2 cup raisins
  • 1/2 cup walnuts, chopped
  • 3/4 cup vanilla yogurt
  • 1/2 cup mayonnaise
  • spring salad greens (optional)

Instructions

  • This colorful Waldorf Brown Rice Salad, made with whole grain Success® Brown Rice, crisp apples, celery, nuts and sweet raisins is tossed with a creamy dressing and served over crispy salad greens.

    Step 1

  • Prepare rice according to package directions. Allow to cool completely.

    Step 2

  • Wash, core and dice apples. Place apples in a large bowl and toss with lemon juice. Add rice, celery, raisins and walnuts and toss to combine. Whisk together yogurt and mayonnaise in a small bowl. Fold into rice mixture.

    Step 3

  • Serve salad over greens, if using.

How to Assemble

It will take about as much time to read the ingredients list as it will to put this salad together. We do recommend that you prepare your brown rice ahead of time and let it cool before adding it in to make sure that the salad is nice and refreshing and not warm.

Once your ingredients are ready, toss your chopped apples with lemon juice. The lemon will help prevent the apples from browning. This is important to make sure your salad looks as good as it tastes! Next, add in the cooled brown rice, celery, nuts and raisins. Coat that mixture in the yogurt and mayo blend and, you’re done!

Feel free to use sliced grapes instead of raisins in this dish. Also, you can use any type of nut you have on hand, such as almonds or pecans, if you don’t have walnuts.

To plate, place a bed of lettuce greens on a plate and spoon your salad into the middle for a show-stopping presentation.
