Meanwhile, heat oil in a large skillet set over medium heat. Add turkey and sauté for 8-10 minutes, breaking up with a wooden spoon, until browned and cooked through. Season with salt and pepper.
Whisk together hoisin sauce, sesame oil, soy sauce and rice wine vinegar in a small bowl. Add to skillet, stirring, until turkey is well coated.
Add coleslaw to turkey mixture and cook for 1-2 minutes, until coleslaw is slightly wilted. Stir in cooked rice. Sprinkle with green onion before serving.
