Turkey Egg Roll in a Bowl

Ingredients

  • 2 bags Success® Brown Rice
  • 1 tbsp canola oil
  • 1 lb ground turkey
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp hoisin sauce
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • 1 1/2 cups prepared coleslaw mix (no dressing)
  • 1 green onion, thinly sliced

Instructions

  • This deconstructed egg roll is a protein-packed meal made with whole grain Success® Brown Rice that will help you power through your day. Big enough to share, it’s also easy to make for something everyone will enjoy!

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Meanwhile, heat oil in a large skillet set over medium heat. Add turkey and sauté for 8-10 minutes, breaking up with a wooden spoon, until browned and cooked through. Season with salt and pepper.

    Step 3

  • Whisk together hoisin sauce, sesame oil, soy sauce and rice wine vinegar in a small bowl. Add to skillet, stirring, until turkey is well coated.

    Step 4

  • Add coleslaw to turkey mixture and cook for 1-2 minutes, until coleslaw is slightly wilted. Stir in cooked rice. Sprinkle with green onion before serving.

    Recipe Tip

    If you love spicy food, add some heat to this dish by garnishing your bowl with a dash of Sriracha hot sauce or chili oil.
