Prepare rice according to package directions.

Meanwhile, heat coconut milk, sugar and salt together in a medium saucepan over medium heat.
Step 3
Stir cornstarch and water together in a small bowl. Add to the coconut milk mixture and bring to a boil, stirring frequently.
Step 4
Boil for 1 minute, or until mixture thickens. Remove from heat.
Step 5
Stir in cooked rice. Transfer to serving bowls and top with mango slices. Garnish with mint, if using.

If you’ve never cooked with coconut milk before, we suggest using the canned variety that can be found in the international section of your grocery store. If you’re not sure how to pick a ripe mango, first look at its color to see if it’s mostly green or green and red. Many mangos turn red as they ripen so this is a good first step in choosing a ripe mango.
Try to lightly squeeze the mango to see if it feels hard or slightly soft. Ideally, you want one that is slightly soft. Try to smell the mango, near its stem. When ripe, mangoes give off a pleasant, fruity aroma.
