Pork Carnitas Rice Bowl

Ingredients

  • 2 lbs pork shoulder, cut into large chunks
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1/2 cup orange juice
  • Juice from 2 limes
  • 2 bay leaves
  • 1 medium onion, quartered
  • 4 cloves garlic, smashed
  • 1 bag Success® Jasmine Rice
  • 1 can pinto beans, drained

Ingredients

  • 2 lbs pork shoulder, cut into large chunks
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1/2 cup orange juice
  • Juice from 2 limes
  • 2 bay leaves
  • 1 medium onion, quartered
  • 4 cloves garlic, smashed
  • 1 bag Success® Jasmine Rice
  • 1 can pinto beans, drained

Instructions

  • Step 1 

    In a bowl, mix the salt, black pepper, cumin, garlic powder, onion powder, and oregano. Rub the seasoning mixture all over the pork chunks. 

    Step 2  

    Place the pork in a slow cooker. Add orange juice, lime juice, bay leaves, onion, and garlic. Cover and cook on low for 8 hours or high for 4 hours, until the pork is tender and easily shredded. 

    Step 3 

    Prepare rice according to package instructions. Heat beans in a saucepan. 

    Step 4 

    Once cooked, remove the pork from the slow cooker and shred it using two forks. Discard any large pieces of fat and the bay leaves. 

    Step 5 

    Serve carnitas over a bowl with rice and beans. 

    Recipe Tip 

    Pork carnitas can also be served with warm tortillas and topped diced onions, cilantro, lime wedges, and avocado for tasty tacos.
