Ingredients

  • 1 bag Success® Jasmine Rice
  • 2 cups rotisserie chicken, shredded
  • 1 can (15 oz) fire-roasted corn, drained
  • 1/2 cup mayonnaise
  • 1 lime, juiced
  • 1 tsp salt
  • 1/2 cup cotija cheese
  • 1 tsp chili powder
  • 1-2 tbsp hot sauce (optional)
  • Chopped cilantro (optional garnish)
  • Lime slices (optional garnish)

Instructions

    Step 1 

    Prepare rice according to package directions.

    In a large bowl, combine chicken, corn, mayo, lime juice, and salt.
