Step 1
Prepare rice according to package directions. Heat oven to 400°F.
Step 2
Place chicken into a 2-quart, shallow baking dish.
Step 3
Stir sauce, brown sugar, and mustard together in a small bowl. Pour sauce mixture over chicken.
Step 4
Bake chicken for 20 minutes, or until cooked to an internal temperature of 165°F. Serve chicken and sauce over rice.
Serve this dish with a side of steamed cut green beans, or your favorite vegetable.

You might be wondering what picante sauce is and what are the main ingredients? It contains finely chopped tomatoes, white onions, spices and jalapeños. It also packs a degree of heat. Picante sauce and salsa are similar except salsa is much chunkier. It also tends to be hotter than salsa. The taste is very tangy and salty and has a tad of sweetness.
Select a few dried chillies and simmer until soft and then chopped or processed. Mix with seeded and chopped fresh serrano or jalapeño chilies, tomatoes, onions, garlic, cumin, cilantro and a dash of vinegar. These ingredients usually make the base of most picante sauce recipes. Process or blend the ingredients and then bring them to a boil. Simmer for 15 minutes. Cool and serve immediately or store in the refrigerator. First: Insert a single chicken breast inside a ziploc bag. Preparing the chicken this way is easy and makes clean up much easier. You can also put the chicken between two pieces of plastic wrap, but this is a much messier choice.
Next: Use a meat pounder to pound the thicker portions of the breast until it is an even 1/2″ thickness all over. If you do not have a meat pounder, the bottom of a normal skillet will also do the trick. Now that you have the chicken breast prepared, add some seasoning and the chicken is ready to be cooked.
