Gremolata 101

With fresh green beans, olive gremolata and tasty rotisserie meat, this Chicken Quinoa Salad is nothing short of complex. The homemade dressing offers up a citrusy and herb-forward punch of flavor, which works perfectly with the nutty flavors of our Success® Tri-Color Quinoa.

Similar to pesto or chimichurri, a classic gremolata is made with fresh herbs, an acidic element and garlic. These are blended together into a punchy, flavorful, uncooked condiment. What sets gremolata apart is the use of citrus, which can be anything from lemon to grapefruit.

Our gremolata is made with Italian parsley, fresh mint leaves, the zest and juice from one lemon and chopped Kalamata olives. Traditionally served with veal, especially the classic dish osso buco, gremolata is best with meat and richer dishes as it adds bright, citrusy flavors.

Our gremolata makes a great dressing for this protein-packed salad with savory shredded rotisserie chicken and crunchy quinoa grains.

One Batch, Endless Dinners

Want to make more than one batch of this citrusy, savory condiment? Multiply the ingredients for the gremolata, depending on how many extra servings you want. Then, simply pour the excess evenly in an ice cube tray. This way, you can pop out single cubes of frozen gremolata whenever you need some to brighten up a dish!
