Prepare quinoa according to package directions.

Place both halves of 1 squash in a microwave-safe dish, cut side down. Pour 2 tablespoons of water into dish. Microwave on HIGH for 10-12 minutes, or until knife inserts easily. Repeat with second squash and reserve.
Step 3
Meanwhile, heat a large skillet over medium heat. Fry bacon until crisp. Add mushrooms, onions, garlic and poultry seasoning. Sauté for 5 minutes.
Step 4
Add quinoa, spinach, maple syrup, if using, salt and pepper. Sauté for 2 minutes, until spinach is wilted.
Step 5
Stuff squash with quinoa mixture. Top with cheese, if using.
