Ingredients

  • 1 bag Success® Tri-Color Quinoa
  • 2 acorn squash, halved and seeds removed
  • 2 slices bacon, chopped
  • 8 oz shiitake mushrooms, sliced
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 tsp poultry seasoning
  • 2 cups baby spinach
  • 1 tbsp maple syrup (optional)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup Parmesan cheese (optional)

Instructions

  • Stuffed veggies are always a winner at the dinner table and this delicious recipe is no exception! Packed with flavor and a multitude of ingredients, you’ll find yourself making this Shiitake Stuffed Acorn Squash recipe again and again.

    Step 1

  • Prepare quinoa according to package directions.

    Step 2

  • Place both halves of 1 squash in a microwave-safe dish, cut side down. Pour 2 tablespoons of water into dish. Microwave on HIGH for 10-12 minutes, or until knife inserts easily. Repeat with second squash and reserve.

    Step 3

  • Meanwhile, heat a large skillet over medium heat. Fry bacon until crisp. Add mushrooms, onions, garlic and poultry seasoning. Sauté for 5 minutes.

    Step 4

  • Add quinoa, spinach, maple syrup, if using, salt and pepper. Sauté for 2 minutes, until spinach is wilted.

    Step 5

  • Stuff squash with quinoa mixture. Top with cheese, if using.
