Ingredients

  • 1 bag Success® Tri-Color Quinoa
  • nonstick cooking spray
  • 2 cups prepared baking mix
  • 1 package (9.6 oz) cooked turkey sausage crumbles
  • 1 cup Cheddar cheese
  • 1 cup milk
  • 4 whole eggs, lightly beaten
  • maple syrup (optional)

Instructions

  • Enjoy a complete breakfast any morning with these quick and easy Sausage, Egg and Cheese Muffins made with quinoa to help you power through your day.

  • Step 1

  • Prepare quinoa according to package directions. Preheat oven to 400°F. Coat 16 muffin cups with nonstick cooking spray.

    Step 2

  • Combine quinoa, baking mix, sausage and cheese in a large bowl. Stir in milk and eggs and blend well.

    Step 3

  • Divide batter among prepared muffin cups, filling 3/4 of the way full.

    Step 4

  • Bake for 18-20 minutes.

    Step 5

  • Serve warm with maple syrup, if using.

    Recipe Tips

  • No baking mix? No problem! Substitute 2 cups all-purpose flour mixed with 1/4 cup butter, 1 tablespoon baking powder and a pinch of salt.

    For bite-sized muffins use 4 mini muffin tins and decrease cook time to 10-12 minutes
