Ingredients

  • 1 bag Success® White Rice
  • 1 cup cilantro, rough chopped
  • 1/4 cup jalapeños coarsely chopped, with seeds
  • 1/4 cup scallions, rough chopped
  • 6 tbsp canola oil
  • 2 tbsp lime juice
  • 1 tbsp sour cream
  • 1 tsp kosher salt
  • 3/4 cup baby arugula
  • 3/4 cup baby spinach
  • 1/2 cup avocado, diced
  • 1/2 cup cucumber, unpeeled, half-moon slices
  • 1/2 cup radishes, sliced
  • 1/2 cup red cabbage, shredded

Instructions

With a spicy, punchy herb dressing, this recipe makes it easy to eat your greens! A simple dish that feeds six, in just 20 minutes, you’ll want to add this to the rotation, all summer long.

  • Step 1: Prepare rice according to package directions. Cool.

  •  Step 2: In a blender, combine the cilantro, jalapeño, scallion, lime juice, sour cream, canola oil and salt. Blend until smooth.

  •  Step 3: Mix cooled rice with arugula, spinach, avocado, cucumber, radish, and red cabbage.

  •  Step 4: Add dressing and toss to combine.
