For Crust:
Step 1
Prepare rice according to package directions.
Step 2
Preheat oven to 400°F. Lightly spray a 12-inch pizza pan with nonstick cooking spray and set aside.
Step 3
Combine rice, eggs, cheese, onion, and salt in a medium bowl and mix well.
Step 4
With the back of a spoon, press mixture evenly onto bottom and sides of pan.
Step 5
Bake crust for 20 minutes, or until lightly browned. Turn oven up to 450°F.
For Pizza:
Step 6
Combine pizza sauce and Italian seasoning in a small bowl.
Step 7
Spoon sauce over crust.
Step 8
Cover crust with toppings of choice. Sprinkle with remaining mozzarella cheese.
Step 9
Bake pizza for 10 minutes, or until cheese melts.
Step 10
Allow pizza to cool for 5 minutes. Cut into wedges and serve.
