Ingredients

  • 1 bag Success® Tri-Color Quinoa
  • non-stick cooking spray
  • 2 cups chopped kale
  • ½ cup onion, chopped
  • 1 clove garlic, chopped
  • ½ cup feta cheese
  • 2 ounces cream cheese, softened
  • 4 eggs, beaten
  • salt and pepper

Instructions

    Step 1

  • Prepare rice according to package directions. Preheat oven to 350°F.

    Step 2

  • Coat a 9-inch pie pan with non-stick cooking spray.

    Step 3

  • In a medium microwave-safe serving bowl combine kale, onions, and garlic. Cover loosely and microwave on HIGH 1 minutes.

    Step 4

  • Stir in quinoa, feta, and cream cheese until well blended.

    Step 5

  • Add eggs, salt, and pepper to taste and mix well. Pour mixture into prepared pan.

    Step 6

  • Bake 30 minutes or until center is set and top begins to lightly brown.

Before we go into technique let’s start with the ingredients. You’ll enjoy the perfect balance of salty feta, rich eggs, nutty quinoa grains, and savory cream cheese – which complement the chopped onion, one clove of garlic, and a bundle of fresh kale. Now comes the low down.

Once your ingredients are assembled, preheat your oven. The next thing you’ll need to do is microwave the chopped vegetables – kale, garlic, onions – in a microwaveable bowl and, when ready, mix them with a cooked bag of our Success® Tri-Color Quinoa, a half a cup of feta and cream cheese.

After you’ve mixed in your eggs, this dish is ready to be poured into a 9-inch pan and popped in the oven for about 30 minutes. Once browned a bit, you can take this quiche out and let it cool.
