Step 1
Prepare quinoa according to package directions. Once finished, set aside to cool.

In a small bowl, whisk together olive oil, red wine vinegar, garlic, Dijon mustard, salt, and black pepper. Set aside.

In a large bowl, combine the quinoa, chickpeas, cucumber, cherry tomatoes, olives, red onion, roasted red peppers, and basil. Drizzle the dressing over the salad and toss to combine. Sprinkle feta on top.
