Ingredients

  • 1 bag Success® Tri-Color Quinoa
  • 1 cup edamame, shelled and cooked
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 2 grilled chicken breasts, sliced
  • 1/4 cup feta cheese, crumbled
  • High Protein Greek Yogurt Ranch Dressing
  • 1/2 cup Greek yogurt
  • 1/4 cup sour cream
  • 1 tbsp chives, chopped
  • 1 tbsp dried dill
  • 1 tbsp dried parsley
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 scoop flavorless protein powder (optional)

Instructions

  • With protein in almost every ingredient, including the quinoa, chickpeas, chicken and Greek yogurt-based dressing, this savory salad packs a serious punch.  

    Step 1 

    Prepare quinoa according to package directions. 

     Step 2 

    In a medium bowl, whisk Greek yogurt, sour cream, chives, dill, parsley, garlic powder, onion powder, salt, black pepper and protein powder (if using) until smooth. 

     Step 3 

    In a large bowl, combine quinoa, edamame, chickpeas, tomatoes, red onion. Top with chicken and drizzle dressing on top. Sprinkle with cheese.
