Step 1
Prepare quinoa according to package directions. Let cool.
Step 2
In a small bowl, whisk olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt and black pepper.
Step 3
In a large bowl, combine quinoa, prosciutto, apple, celery, cherries, walnuts, red onion and feta. Drizzle dressing on top and toss well.
Step 4
Place a bed of spinach and top with quinoa salad.
