Ingredients

  • 4 green onions, green part only
  • 1 red chili pepper, seeds removed
  • 2 tbsp fresh cilantro leaves
  • 1 can (20 oz) pineapple tidbits, drained, 1/4 cup juice reserved
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 1/2 tbsp soy sauce
  • 1 lb frozen, cooked and peeled shrimp, thawed

  • Prepare rice according to package directions.

    Step 2

  • Meanwhile, place green onions, chili pepper and cilantro in the bowl of a food processor and process until finely chopped. Mix together pineapple tidbits and reserved 1/4 cup juice with cilantro paste in a small bowl.

  • Heat oil in a large skillet over medium heat. Add garlic and sauté for 30 seconds. Add soy sauce and pineapple mixture to skillet and bring to a boil. Remove from heat and add shrimp to skillet. Stir to heat through. Fold in cooked rice and stir to thoroughly combine.
