  • 2/3 cup pecans, chopped

Ingredients

  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 2 tbsp butter
  • 2/3 cup pecans, chopped

Instructions

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • In a heavy two-quart saucepan over medium heat, combine evaporated milk, reserving 2 tablespoons, cooked rice, pumpkin, ½ cup brown sugar, pumpkin pie spice and salt.

    Step 3

  • Stir and cook over medium heat 8-10 minutes, or until pudding begins to thicken.

    Step 4

  • Melt butter in a small saucepan over low heat. Add remaining brown sugar and reserved evaporated milk. Stir until sugar dissolves and sauce is smooth, about 2 minutes.

    Step 5

  • Stir in nuts.

    Step 6

  • Serve pudding topped with pecan praline sauce.
