Ingredients

  • 2 bags Success® White Rice
  • 1 can (12 oz) evaporated milk, divided
  • 1 cup canned pure pumpkin puree
  • 3/4 cup dark brown sugar, divided
  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 2 tbsp butter
  • 2/3 cup chopped pecans

Instructions

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Set aside 2 tablespoons of evaporated milk. Combine remaining evaporated milk, cooked rice, pumpkin, 1/2 cup brown sugar, pumpkin pie spice and salt in a heavy, 2-quart saucepan set over medium heat.

    Step 3

  • Cook, stirring frequently, for 8-10 minutes, or until pudding begins to thicken.

    Step 4

  • Melt butter in a small saucepan over low heat. Add remaining brown sugar and reserved evaporated milk. Stir until sugar dissolves and sauce is smooth, about 2 minutes. Stir in pecans.

    Step 5

  • Serve pudding topped with pecan praline sauce.
