Okro soup is made with okra vegetables cooked in a delicious mixture of oil, shrimps, goat meat, fish and African spices, and simmered to perfection! This loaded soup is a staple in some West African countries like Liberia, Nigeria, Ghana, and Cameroon. This soup is so deliciously satisfying and nutritious and is loaded with proteins and healthy fat.
Enjoy this West African staple brimming with fresh spices, smoked fish and crisp vegetables.
Step 1
Prepare rice according to package directions.
Step 2
Add the shrimp and smoked fish to a large pot. Add enough water to cover the shrimp and fish. Add bouillon, black pepper, cayenne pepper, and salt. Boil until the shrimp and fish are soft, remove and set aside. Reserve the shrimp and fish stock for later.
Step 3
In a medium pot, add the okra and cover with water. Boil for 15 minutes then set aside.
Step 4
In a large skillet heat the olive oil on medium heat. Add the onions and cook until they begin to brown. Add in the cooked okra and occasionally stir for 5 minutes.
Step 5
Add the reserved shrimp and fish stock and bring to a boil. Add the shrimp, fish, bell peppers, and tomato. Bring to a simmer for about 5 minutes.
Step 6
In a serving bowl, add the okra on top of the cooked rice. Serve and enjoy!
