Okro soup is made with okra vegetables cooked in a delicious mixture of oil, shrimps, goat meat, fish and African spices, and simmered to perfection! This loaded soup is a staple in some West African countries like Liberia, Nigeria, Ghana, and Cameroon. This soup is so deliciously satisfying and nutritious and is loaded with proteins and healthy fat.
Step 1
Boil the shrimp and smoked fish for 10 minutes beforehand. After boiling both, you will need
the stock to enhance the flavor of the soup so don’t toss it.
Step 2
To boil the shrimp and fish add enough water to cover it, then add some salt, black pepper, and
bouillon. Boil till it is soft.
Step 3
To prepare the okra; boil the okra for 15 minutes, drain the water set aside.
Step 4
In a large skillet on medium heat, add some olive oil. Fry some onions till it just begins to turn
brown, then add the cooked okra. Stir in for about 5 minutes and the okra will begin to turn a bit
slimy.
Step 5
Add in the shrimp and fish stock from boiling them or just water if you have none. The stock
is usually very flavorful so if you just add water, you might need to add a bit more spices to bring
out the flavor.
Step 6
Bring to a boil and add the spices, fish, shrimp and bell pepper. You can add or subtract
anything on this list, just make it your own! I added tomatoes at the end because I love
tomatoes.
Step 7
Let it boil for about 5 minutes and check the texture of the okra. At this point, I am usually fine
with the texture but if it is too crunchy for you, let it boil for a few more minutes.
Step 8
Cook the Success White Rice as instructed on the package. Only 10 minutes!
Step 9
In a serving bowl, add the okra on top of the cooked rice, Serve and enjoy!
