Okro Soup (Liberian Okra Soup)

Okro soup is made with okra vegetables cooked in a delicious mixture of oil, shrimps, goat meat, fish and African spices, and simmered to perfection! This loaded soup is a staple in some West African countries like Liberia, Nigeria, Ghana, and Cameroon. This soup is so deliciously satisfying and nutritious and is loaded with proteins and healthy fat.

Ingredients

  • 2 bags of Success® Rice 
  • 4 cups frozen cut okra, chopped.
  • 1 lb. raw shrimp
  • 1 lb. smoked white fish 
  • 1/2 cup olive oil
  • 1 onion, chopped 
  • 2 bell peppers, chopped
  • 2 tbsp bouillon
  • 1 tbsp black pepper
  • 1 tbsp cayenne pepper
  • 1 tbsp salt
  • 1 large tomato, chopped (optional)

Instructions

  • Enjoy this West African staple brimming with fresh spices, smoked fish and crisp vegetables.

    Step 1

  • Prepare rice according to package directions. 

    Step 2

  • Add the shrimp and smoked fish to a large pot. Add enough water to cover the shrimp and fish Add bouillon, black pepper, cayenne pepper, and salt. Boil until the shrimp and fish are soft, remove and set aside. Reserve the shrimp and fish stock for later. 

    Step 3

  • In a medium pot, add the okra and cover with water. Boil for 15 minutes then set aside. 

    Step 4

  • In a large skillet heat the olive oil on medium heat. Add the onions and cook until they begin to brown. Add in the cooked okra and occasionally stir for 5 minutes. 

    Step 5

  • Add the reserved shrimp and fish stock and bring to a boil. Add the shrimp, fish, bell peppers, and tomato. Bring to a simmer for about 5 minutes. 

    Step 6

  • In a serving bowl, add the okra on top of the cooked rice. Serve and enjoy!

Frozen Shrimp Cook Prep

The preparation process of the shrimp tends to be the same whether you are working with fresh or frozen shrimp. Before you can skewer them, stir fry them or boil them for your favorite cocktail sauce, you will need a few minutes of prep time.

To start with, buy shrimp that have not been peeled or deveined. Defrost the shrimp. (Refrigerate overnight after removing the shrimp from the bag and place in a bowl of cold water.)

Soak them in salt water to replenish their freshness once they have thawed and before you clean them.  While holding your shell with a few fingers, remove the shell and pull off its legs using your other hand. By using your thumbs, peel back the shell and remove. The head will come off too.

Remove the tail by holding the body of the shrimp and pulling on the tail.  To devein your shrimp, make  a cut down the back of the shrimp using a small paring knife. Pull the vein out by using your knife and rinse the shrimp.

You can also use a toothpick if you would like.  Once you have cleaned them, place the shrimp in  a fresh bowl of water.
