  • 1/2 cup coconut oil
  • 1/2 cup honey
  • 2 cups quick cooking rolled oats
  • 1 cup shredded coconut
  • 1 cup peanuts, chopped, divided

  • Prepare quinoa according to package directions.

  • Meanwhile, melt peanut butter, coconut oil and honey in a small saucepan over low heat. Stir until peanut butter and oil are melted and ingredients are well combined.
