These chewy, nutty No-Bake Peanut Butter Quinoa Cookies are perfect for anyone looking to enjoy easy treats, with tons of flavor. Not to mention, they are also 100% vegan and peanut-butter lover approved.
Prepare quinoa according to package directions.
Meanwhile, melt peanut butter, coconut oil and honey in a small saucepan over low heat. Stir until peanut butter and oil are melted and ingredients are well combined.
Remove from heat; stir in quinoa, oats, coconut and peanuts, reserving a few for sprinkling on top, if desired. Stir mixture until thoroughly combined.
Line a baking sheet with parchment paper. Using a small scoop (about 1 tablespoon) drop rounded mounds onto cookie sheet. Using the bottom of a glass, gently flatten each cookie.
Sprinkle with reserved peanuts, if desired. Place cookies in the freezer for 30 minutes to an hour to solidify. Serve chilled.
For a fancier presentation, dust the cookies with powdered sugar just before serving.
