Step 1
Prepare quinoa according to package directions.

Meanwhile, melt peanut butter, coconut oil and honey in a small saucepan over low heat. Stir until peanut butter and oil are melted and ingredients are well combined.

Remove from heat; stir in quinoa, oats, coconut and peanuts, reserving a few for sprinkling on top, if desired. Stir mixture until thoroughly combined.
Step 4
Line a baking sheet with parchment paper. Using a small scoop (about 1 tablespoon) drop rounded mounds onto cookie sheet. Using the bottom of a glass, gently flatten each cookie.
Step 5
Sprinkle with reserved peanuts, if desired. Place cookies in the freezer for 30 minutes to an hour to solidify. Serve chilled.
