Step 1
Prepare rice according to package directions.

Meanwhile, combine jackfruit and barbecue sauce in a large skillet over medium heat. Bring to a boil. Reduce heat to low; cover and simmer for 8 to 10 minutes, until jackfruit is heated through and sauce has thickened.
Step 3
Divide rice among 4 bowls. Top each bowl with jackfruit and sauce, black beans, avocado, corn and tomatoes. Drizzle with vegan sour cream.

For a loaded burrito bowl, add finely chopped fresh cilantro, vegan shredded cheese, and pickled jalapeño slices. Serve with lime wedges.
