Ingredients

  • 1 Bag Success® White Rice
  • 1 tbsp canola oil
  • 1/2 lb turkey sausage
  • 1 onion, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 1 clove garlic, minced
  • 1 tsp chili powder
  • 1/4 tsp paprika
  • 1 can (15 oz) black eyed peas, drained and rinsed
  • 1 can (10 oz) diced tomatoes and green chilies
  • 1 tbsp lemon juice

Instructions

  • A hearty and complete meal, this ingredient-packed Hoppin’ Juan rice dish makes a perfect breakfast, lunch or dinner.

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Heat oil in a large, nonstick skillet over medium heat. Crumble in turkey sausage and cook, stirring often for 5 minutes, or until browned. Add onions, peppers, garlic, chili powder and paprika to skillet and sauté until vegetables are crisp-tender, about 5 minutes.

    Step 3

  • Add rice, black eyed peas, diced tomatoes and green chilies and lemon juice to skillet and mix well. Reduce heat and simmer until heated through.
