A hearty and complete meal, this ingredient-packed Hoppin’ Juan rice dish makes a perfect breakfast, lunch or dinner.
Step 1
Prepare rice according to package directions.
Step 2
Heat oil in a large, nonstick skillet over medium heat. Crumble in turkey sausage and cook, stirring often for 5 minutes, or until browned. Add onions, peppers, garlic, chili powder and paprika to skillet and sauté until vegetables are crisp-tender, about 5 minutes.
Step 3
Add rice, black eyed peas, diced tomatoes and green chilies and lemon juice to skillet and mix well. Reduce heat and simmer until heated through.
