Make dinner in a flash with this Home-Baked Cheesy Chicken and Broccoli with Rice casserole loaded with the crowd-pleasing, classic combination of broccoli and cheese.
Preheat oven to 350ºF.
Prepare rice according to package directions. Transfer to a large bowl.
Fold cheese into hot rice and stir to combine. Add milk and blend well. Fold in broccoli and chicken.
Pour mixture into a 2-quart, ovenproof casserole dish. Top with breadcrumbs.
Bake for 10-15 minutes until top is beginning to brown and dish is heated through.
If you’re all out of Cheddar, try this dish with mozzarella, Gouda, fontina or another favorite cheese.
To toast bread crumbs, heat 1/2 tablespoon of olive oil in a medium skillet over medium-high heat. Add bread crumbs and toast, stirring frequently, until golden brown, about 5 minutes.
